Some of the youtube uploaders don't want to their real name to appear on their channel. Whatever your reason is, I will show you how to change it. Remember your youtube channel name is same as your google+ name and so if you change either google+ or youtube it will synchronize the same name.
log-in to your youtube account
click channel
Then on the right side of your name click the Settings Icon
